Cake #24: Hot Fudge Cake (Light or Rich)


This is my go-to, too tired to cook dessert that I've been making since I was a teenager. It's as easy as falling down stairs and I guarantee you have everything you need for it in your pantry.

As an added bonus I'm including two recipes, a light and a decadent one. Hopefully one will be a good fit for your dessert needs :-)


Hot Fudge Cake (light)

Ingredients:

1 cup all-purpose flour
3/4 cup white sugar
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup packed brown sugar
1 3/4 cups hot water

Optional: Small handful of chocolate chips can be mixed into the batter. Calories vary depending on what you call a "small handful"

Directions:

In a medium bowl, combine flour, white sugar, 2 tablespoons cocoa, baking powder, and salt. Stir in the milk, oil, and vanilla until smooth. Spread in ungreased 9 inch square baking pan.
Combine brown sugar and 4 tablespoons cocoa; sprinkle over batter in the pan. Pour hot water over all; do not stir.
Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes. Serve warm.

This recipe is from Lollychops, and there it goes by "Chocolate Cobbler". The butter makes it a spectacular treat.

Hot Fudge Cake (Rich)

6 Tbl butter 

1 C flour 

1/4 tsp salt
2 tsp baking powder 

3/4C sugar 

1/2 C chopped pecans 
(Optional. Good for crunch, bad for silky rich smoothness)
2 TBL baking cocoa 

1/2 C of milk  

1 tsp vanilla 

1/2 C sugar 

1/2 C brown sugar 

1/4 C of baking cocoa 

1 1/2 C of boiling water

1. Melt butter in 13x9 baking pan in a 350 oven. 



2. Combine the flour, salt, baking powder, 3/4 cup of sugar, pecans, 2 Tbl baking cocoa, milk and vanilla in a small bowl;

spoon mixture over the melted butter. DO NOT STIR TO MIX! 

3. Mix remaining sugars and 1/4 cup of cocoa together


 and sprinkle over batter.. DO NOT STIR TO MIX! 
4. Next, pour the boiling water over the top. DO NOT STIR! 

5. Bake at 350 for 35-40 minutes.

Cool and serve with whipped cream or vanilla ice cream.

Cake# 23: Mocha Candy Bar Trifle with Caramel & Hot Fudge



This ain't your mama's trifle. There aren't any berries, jam, pound cake, whipped cream (well, we have been known to spray some over the top of our bowl but that's different). It's all crazy chocolate madness all the time.

This cake is a monstrosity. Seriously. It'll add five pounds to you over a weekend... all to your backside. And let me tell you, when a woman who thought making 52 Cakes in a year says this cake is TOO MUCH you know you should proceed with caution. Or better yet, run away without reading the recipe.

Allright, for you intrepid bakers who decided to keep reading, here's the thing - it's worth every sinful bite. It's worth the expense. It's worth the time. It's worth it.

Also, this recipe is scalable. It doesn't need to be made in a punch bowl - you can make it with a cupcake, pudding cup and snack-sized chocolate bar. It's a great trick to have up your sleeve.

We alternate years between making it in a punch bowl and making it in Mason Jars. The jars are fun as it makes the trifle portable and perfect for gift giving. We even made it camping one year; making the pudding by tossing zip-loc baggies back and forth. Good times.

The essential recipe is this:

Layer cake, flavor booster (caramel sauce, hot fudge, syrups, jam, pie filling etc), wet layer (pudding, whipped cream) and toppings (candy, fruit etc.) until serving container is full. Chill a bit to allow flavors to meld. Serve in bowls with whipped cream.

We make this once a year on Trenton's birthday. 
Here's the way he likes it:

2 Mocha Snack Cakes. I double the recipe and have had great luck using an 8x8 pan and a 9x13 pan. Nothing overflows. You need a sturdy cake to take all the weight and moisture so I wouldn't recommend a box mix unless you make substitutions - like applesauce and buttermilk.

2 large packages of vanilla instant pudding
6 Cups Whole Milk
1 vanilla bean (optional but delicious)


Hot Fudge Sauce
Caramel Sauce (ice cream topping)

Chopped up Candy Bars of your choice. We used: Crunch, Twix, Reece's Peanut Butter Cups, Snickers, Milky Way and some M&Ms. I bought a mixed bag of mini-chocolate bars that was perfect for this.

Whipped Cream for serving.

Make your pudding: After pouring milk into bowl, cut vanilla bean in half length-wise and scrape out seeds with the side of your knife. Whisk into milk, add pudding powder and whisk for about three minutes. Chill in fridge for five minutes.


Slice cake into cubes. I aim for about one inch cubes. Ish.


Collect your layers and punch bowl. Cake, flavor boosters, wet layer and toppings.
The sundae toppings drizzle best if you microwave them for about 30 seconds.


Cover bottom of dish with cake. Don't worry about gaps, gaps are good. It lets the pudding seep through.


Drizzle with caramel sauce.


Drizzle with Hot Fudge Sauce.


Top with half of the pudding. I drop it by spoonfuls.


Sprinkle chopped candy all over the top.


Add another layer of cake. This should come to about an inch from the top of your bowl. You might have cake left. I saved mine for cake pops.


Drizzle.


Plop on pudding. I like little clouds of pudding better then spread evenly but it's your cake. 



More candy!!!


And since it's the top and this trifle is the same color of my 70's era Brownie Uniform, sprinkle a few M&Ms around for color.


Look at this marvel:


One caveat, don't sprinkle with M&Ms until presenting the cake as the color will run into the pudding.


It's really very good.

Aren't those roly rosies fun? I sprayed mine with homemade glimmer mist before rolling it up. The color was such a nice match to the paper.

On a side note, thanks everyone for bearing with me the past twelve weeks. It's just been illness followed by injury, repeat, repeat, repeat. I don't think I've had a run of bad luck like this before. Hopefully it's all behind me now and I can start recovering and getting back to making fun stuff.

Cake #22: Fourth of July Firecracker Cake

Firecracker Cake for Fourth of July Weekend. 

We followed the directions found at Cooking with Sugar except that instead of making the cake mix as directed on the box, we combined vanilla cake with:

 1 1/4Cups Buttermilk
4 eggs
1/3 Cup oil

CupCards {to go} Summer Kit: Boutique

I had so much fun making cards using CupCards {to go} first ever SUMMER KIT! Like WAY TOO MUCH FUN. There was Girls Paperie, Melissa Frances, Cosmo Cricket, Basic Grey... tags, ribbons, rub-ons, roly rosies. Oh my! It was like a box of inspiration. I had six cards made before I even paused to think about what to make. Which for me is unusual. Sonda is just that good :-)


Kites add a playful element to cards and they are such a summery image. To make them freehand cut the basic kite shape and then trace the first one to make three more. Don't worry about the lines being perfectly straight or symmetrical because kites bend and twist in flight. It makes them look real.

Cut two of your kites in quarters and glue two pieces on top of the base kite in alternate colors. Put your kite on a scrap piece of paper and outline your kite with a black pen (like Micron). Attach baker's twine to the back with tape and secure to your card using dimensional foam dots so the kites really look like they're flying.

Sunshine Card


Hey everyone, just a short post today as I'm violently ill from going off the Prednisone. The doc said going from 60mgs to zero is fine... it's really not. Not at all. I actually thought I was going to end up in the hospital and if you factor in how much I hate those places... yeah... not good.


This is my last card from the June CupCards {to go} Virginia kit, but don't worry, it's only four days until the big reveal for the summer kit. Yay!
